Foodie Friday – Healthy Nuts & Raisin Oatmeal Cookies

In line with my fitness and health journey, I’m writing this blog for everyone who loves to have sweet treats and want to keep a healthy lifestyle (like me). The good news is we don’t have to give up your love for sweets, here’s a healthy alternative that is really quick and easy to prepare.

INGREDIENTS

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt (optional)
  • 1 1/4 cups brown sugar
  • 1 cup softened butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons milk
  • 2 teaspoons vanilla extract
  • 2 1/2 cups quick or old-fashioned oats
  • 1 cup raisins
  • 1 cup flax-seed
  • 1 cup coarsely chopped nuts, we normally use mixed nuts, but for this recipe we’ve used walnuts

PROCEDURE

  • Pre-heat the oven to 190 degrees C
  • COMBINE flour, baking soda and salt in small bowl
  • Beat brown sugar, butter and granulated sugar in large mixer bowl until creamy. Then beat in eggs, milk and vanilla extract
  • Gradually beat in flour mixture. Stir in oats, and nuts; mix well
  • Drop by rounded tablespoon onto the baking pan
  • Bake the cookies for 9 to 10 minutes for chewy cookies or 12 to 13 minutes for crispy cookies
  • Cool on baking sheets for 1 minute
